  5. This is one of my favorite lazy meals. I like roasted corn and sliced tomatos on my potatoes also.
I'm done with four course meals...I'm lazy all the way now. :)

  6. Although I keep trying to tell myself that I'm just "busy", I find myself being lazy about cooking lately, too! I wonder what's up... Anyway, this looks really delish! I never thought of walnuts, but I'm betting it's really good! karin

  7. Hi Janet,

This was a meal I made about once a month years ago for 2 reasons. My job did not allow time for complicated meals during the week and my daughter was a very picky eater. The only difference is mine wasn't vegan, I made a cheese sauce.

My last night's lazy was a baked potato topped with leftover chili!

  9. Yesterday WE enjoyed butternut squash, onion, and apple cooked in the crock pot along with some dried cranberries and walnuts (WALNUTS were what triggered my comment - when I saw them on YOUR potato combo).

(I won't tell you that I put 2 chicken breasts on top of the veggies.) We enjoyed every bit of it!

  10. sarah & leslie - i love so many different things on top of baked potatoes too.

joan - basic white sauce, 2 T earth balance margarine with 2 T flour stir until nutlike flavor emerges and add 1 c soymilk. season.

karin - if you have the time and are not lazy roast the veggies and walnuts and proceed. yum.

linda & rebecca - cheese, chicken? i remember them well?

  13. Oh heavens, it looks lovely. What kind of white sauce? I can't find any really good ones that aren't roux-based.

  14. I´d love this dish too. But I´m not a vegan, and would wish to add some cheese along. Are you absolutely against dairy products?

    carol - thanks.

ria - thanks it is yammie.

mmw - just a basic white sauce with vegan substitutes, it's good.

  18. Looks good to me. I wouldn't call that lazy either. Just simple comfort food. I just discovered roasted cauliflower-- I could eat an entire head cooked this way. Who Knew?......

I was in my garden today and noticed little foxgloves popping up. Are you having any luck? Would you recognize the leaf? Kind of looks like a mint leaf at first.

  21. londen - thanks love.

sis - i bet it is good.

julie - i know, everything roasted is better. no, signs of them yet. but i'll be on the lookout.

fiona - thanks and the walnuts are the trick.

joyce - it's all in the why i'm vegan post. but it's b/c of the inhumane treatment of animals in our dairy industry.
